« Sausage and Tomato Bake »
For 4 servings
Per serving: 590kcals, 45.1g fat, 15.7g saturated fat
Ingredients:
3 large potatoes, peeled and cut into 2.5cm (1 inch) cubes
8 thick sausages
450g mixed cherry and plum tomatoes
2 tbsp fresh herbs- sage, thyme, basil or parsley, coarsely chopped
3 tbsp The English Provender Co. Caramelised Red Onion Chutney
2 medium onions, sliced
2 tbsp olive oil
Method:
Preheat oven 190C Mark 5.
Boil the potato cubes for about 10 minutes until starting to soften, then drain and put into an oven proof dish.
Add the tomatoes, cutting larger ones in half, to the dish with the herbs, onion and The English Provender Co. Caramelised Red Onion Chutney and top with sausages.
Drizzle with oil and bake for 20 minutes. Stir well and cook for a further 20 – 25 minutes.
Serve with roasted squash, parsnip and sweet potatoes.
